Do you want the document produced in a digital format or do you want to complete it by email or Zoom, for example. These are two different things and the difference is important.
A lot of documents can be produced in a digital format. This means that they can be signed with a digital signature and security features embedded in the document so that the recipient can verify it has been notarised properly or have an e-apostille attached. There are a few documents that cannot be notarised in this way.
Many more documents cannot be notarised from a distance. This is due to the nature of the document. At present all oaths, affidavits and declarations must be done in person so that you are properly identified and your capacity assessed. They can be completed as a digital document but not remotely. These documents are often not clear on first sight that they are declarations or oaths and may simply refer to them being sworn (a lot of US documents are drafted this way), but this is the category they fall into.
All this means that when you send a request to a notary for electronic notarisation, they will need to see your document and check your location to see how it needs to be completed.
